Banana & Choco Chip Muffins
Yield: 12 medium size muffins
You Need:
- 3/4th cup (96 gms) all purpose flour/maida
- 1/4 cup (28 gms) whole wheat flour/atta
- 1/2 cup (120ml) oil
- 1/2 cup (100 gms) caster sugar
- 1/3 cup (50gms) chocolate chips
- 1 tsp baking powder
- 1 tsp vanilla extract or essence
- 2 eggs, at room temperature
- 1/2 cup mashed bananas
Method:
1. Preheat the oven to 180 degrees C. Line a 12 hole muffin tray with cupcake liners.
2. Sift the flours, baking powder and salt together a couple of times. Keep aside.
3. Beat the sugar and the oil till pale.
4. Add one egg at a time and beat well. Pour in the vanilla extract and blend.
5. Add the mashed bananas and chocolate chips and mix gently.
6. Add the flour mixture in parts and gently mix with a spatula till well incorporated.
7. Pour into the prepared muffin tray and bake 22-25 minutes or till the skewer inserted comes out clean.
4. Remove and cool on a wire rack for 10-15 minutes. Cool before serving.
Notes:
- I used a blend of all purpose flour & whole wheat flour. You can use only all purpose flour too.

I wanted to ask you abt the star silicon muffin molds.. i was always apprehensive abt using them, i thought they wont hold shape coz I did not have star shaped muffin trays. I always thought the silicon case will widen when the muffin bakes. can you keep these star cases in the oven without a muffin tray….did i confuse you…coz iam right now..I hope you got my point!!!!!

Liked your blogs, it really inspired me to cook..especially cakes. I started baking just a Month ago.
