Last week we bought plenty of mangoes to be used in various preparations, however since none of those plans materialised we were left with too many to be eaten so off they went into the blender. Since we are not much of fruit juice/smoothie/beverage kind of people (at least we don’t make them at home) I had never really thought of making any kind of beverages this summer. But then the heat is getting insufferable now and thirst quenchers are a must to cool down our senses. While the lil boy usually prefers his oreo milkshakes in the evenings the husband LOVES his chilled juices with tons of ice cubes in them. So last week when he got back home from work looking like he had lost the war waged by the harsh sun he was welcomed by this drink which instantly refreshed him.
Honestly, this is a no brainer of a recipe. You don’t need a Ph.D in cooking to figure out what goes in a simple mocktail, just add a bit of this and a splash of that and you are ready with your own concoction of deliciousness. If you want to get high, try adding a splash of vodka or rum and enjoy it as a cocktail – but make sure you are partying or just chilling at home and don’t have to drive 🙂
As a mocktail this is a great combination of flavours. The sweetness and tartness of both the fruits offset each other beautifully and the little addition of sugar or honey brings out the right amount of sweetness to make this drink very refreshing and cooling. You totally need to drink it this summer!
Ingredients
- 1 cup (250ml) pineapple juice * see notes
- 1 cup mango pulp * see notes
- 1-2 tablespoons sugar or honey adjust to taste
- 4-5 ice cubes crushed
- Pineapple rings or wedges to decorate
- Mint leaves to garnish
Instructions
- Blend all pineapple juice and mango pulp together until there are no mango lumps remaining. Add sugar or honey to taste
- Add the crushed ice cubes and pulse a couple of times and pour into serving glasses
- Decorate with pineapple rings or wedges, mint leaves and serve immediately
Notes
1. You can use fresh pineapple juice that is available at most supermarkets – these have a 2-3 day shelf life (under refrigeration). Avoid using the ones that last upto 6 months (like Tropicana/Real Juice in India) as their flavour is masked. To make your own fresh pineapple juice blend 1-1/2 cups finely chopped pineapple with approx 1/2 cup of water. Strain and blend the chunky leftover pulp again and strain again.
2. I used a medium size mango which yielded approx 1 cup of pulp
3. Depending on how tart the pineapple juice is you need to adjust the amount of sugar
4. When mangoes are not in season use 2 sliced bananas instead of mangoes
5. The original recipe asked for 1/2 cup of lime juice to be added but I felt it would make the drink too sour. If the pineapples and mangoes you are using are very sweet and you want to perk up the flavour you can go ahead and add the lime juice
